  • 2 racks of pork ribs (baby back or spare ribs)

  • 1 fresh pineapple, peeled

  • Wooden skewers

Zubereitung/Instructions

1. Vorbereitung

Die Silberhaut von den Rippchen entfernen und großzügig mit dem Honey Hog BBQ Rub würzen. Die Gewürze leicht andrücken und die Rippchen idealerweise 1–2 Stunden ziehen lassen.

Die geschälte Ananas aufrecht hinstellen und die Rippchen mit Holzspießen rundherum daran befestigen – fast wie ein „Rippchen-Turm“.

💡 Extra-Tipp: Das in der Ananas enthaltene Enzym Bromelain sorgt dafür, dass das Fleisch besonders zart wird.

2. Die 3-2-1 Methode

Phase 1 – Räuchern (3 Stunden)
Die Ananas mit den befestigten Rippchen bei ca. 110–120°C indirekter Hitze im Grill oder Smoker garen. Optional mit Holz (z. B. Apfel oder Hickory) räuchern.

Phase 2 – Dämpfen (2 Stunden)
Die Ananas bleibt zusammen mit den befestigten Rippchen bestehen.
Alles zusammen wird in Butcher Paper eingewickelt und mit einer Mischung aus Apfelessig, Cola und Blues Hog BBQ Sauce angegossen.

Anschließend wieder zurück auf den Grill legen und bei gleicher Temperatur weitergaren. Durch das Einwickeln entsteht eine saftige Dampfphase, während die Ananas weiterhin Geschmack und Zartheit abgibt.

Phase 3 – Glazen (1 Stunde)
Die Rippchen vorsichtig aus dem Butcher Paper nehmen und von der Ananas lösen.
Zurück auf den Grill legen und mit Blues Hog BBQ Sauce glasieren.

Mehrmals nachpinseln, bis eine schöne, klebrige Oberfläche entsteht.

🍖 Servieren

Die Rippchen sind fertig, wenn sie butterzart sind und sich leicht vom Knochen lösen. Perfekt mit klassischen Beilagen wie Coleslaw, Mais oder Kartoffeln.

Diese besondere 3-2-1 Variante kombiniert klassischen BBQ-Geschmack mit fruchtiger Frische.
Durch die Kombination aus Ananas, Dampfphase im Butcher Paper und kräftiger BBQ-Sauce entstehen extrem saftige, aromatische und zarte Rippchen.

1. Preparation

Remove the membrane from the ribs and season generously with the Honey Hog BBQ Rub. Press the seasoning into the meat and let it sit for about 1–2 hours if possible.

Place the peeled pineapple upright and attach the ribs around it using wooden skewers—creating a kind of “rib tower”.

💡 Pro tip: The enzyme bromelain in pineapple naturally helps break down proteins, making the meat extra tender.

2. The 3-2-1 Method

Phase 1 – Smoke (3 hours)
Place the pineapple with the attached ribs in your smoker or grill at 225–250°F (110–120°C) using indirect heat. Add wood chunks (like apple or hickory) for extra smoke flavor if desired.

Phase 2 – Wrap & Braise (2 hours)
Keep the ribs attached to the pineapple.
Wrap everything together tightly in butcher paper and pour in a mixture of apple cider vinegar, cola, and Blues Hog BBQ sauce.

Place it back on the grill at the same temperature. The wrapping creates a moist braising environment while the pineapple continues to add flavor and tenderness.

Phase 3 – Glaze (1 hour)
Carefully remove everything from the butcher paper and take the ribs off the pineapple.

Place the ribs back on the grill and glaze them with Blues Hog BBQ sauce.
Brush multiple layers on until you get a sticky, caramelized finish.

🍖 Serving

The ribs are done when they are fall-off-the-bone tender. Serve with classic BBQ sides like coleslaw, corn, or potatoes.
